Biftec tartar

Pentru 4 portii
Ingrediente:
– 400 g carne tocata de vita (fara pielite si fara grasime)
– 2 cepe mari (preferabil rosii)
– 4 galbenusuri crude
– 4 albusuri fierte
– 2 linguri de unt
– 150 g castraveti murati in otet
– 2 lingurite sos de chili
– 2 lingurite sos Worcestershire
– patrunjel
– ketchup
– 2 lingurite boia
– sare
– piper

Se toaca marunt de tot albusurile fierte, castravetii si ceapa. Se amesteca intr-un castron mare impreuna cu carnea, galbenusurile crude, sosul de chili, sosul Worcestershire si condimentele. Se adauga ketchup (picant sau dulce, dupa preferinte) pentru a-i oferi amestecului un aspect cremos.
Se tine jumatate de ora la rece. Se serveste in farfurie intinsa, ornat cu castraveciori acri taiati fasii, masline si frunze de patrunjel, impreuna cu paine prajita si unt.
